A Hawaiian national dish, poke (pronounced poke-ay) means “to cut or slice” in Hawaiian. A typical poke dish consists of raw marinated fish (commonly tuna) cut into cubes and layered with sticky rice and pickles. Traditionally, it was composed of raw tuna chunks, seaweed, candlenuts, and salt. The dish is believed to have originated from fishermen. They took some of their daily catch, cut and seasoned the fish, and ate them while on their boats. 

Now popular around the world, poke dishes come in many variations with different toppings that include sesame oil, scallions, soy sauce, Maui onions, and more. The fish used has expanded beyond tuna, and offerings now include salmon, red snapper, and other seafood. Poke is popular as a healthy food option. Fish has many benefits, including lowering cardiovascular disease risk, and is a good vitamin B12 source. Diners also like the option of having food on the go, and poke qualifies as a grab-and-go food.
